Ingredients
2 ½ cup flour2 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon nutmeg
2 medium eggs, beaten
1 ¼ cup brown sugar
1 cup pureed cooked pumpkin
½ cup milk
¼ cup vegetable oil
1 ½ cup Wheat Chex or similar breakfast cereal
¾ cup raisins, coarsely chopped
Preparation
1. Preheat oven to 350°F.2. In a large bowl, sift together flour, baking powder, salt, baking soda, cinnamon, and nutmeg.
3. In a separate medium bowl, combine eggs, sugar, pumpkin, milk, and oil; whisk until smooth. Add to flour mixture and stir until mixed. Gently stir in cereal and raisins.
4. Transfer to a lightly greased bread pan. Bake 60 minutes, until an inserted toothpick comes out clean. Remove from oven, cool 15 minutes, and remove from pan to cool completely.
