Ingredients
2 medium eggs3 cups flour
1 cup brown sugar
1 cup milk
1 cup pureed cooked pumpkin
½ cup unsweetened applesauce
2 tablespoons white sugar
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon pumpkin pie spice
¼ teaspoon cloves
¼ teaspoon allspice
¼ teaspoon ginger
Preparation
1. Preheat oven to 325°F.2. Combine all ingredients in a large bowl; mix until smooth.
3. Fill sprayed muffin tins with mixture until ¾ full. Bake 20 to 25 minutes, until a toothpick inserted in a muffin comes out clean.
