Ingredients
1 ½ cups all-purpose flour½ cup sugar
2 teaspoons baking powder
½ teaspoon cinnamon
½ teaspoon salt
1 cup milk
½ cup cooked pumpkin puree
¼ cup of butter, melted
1 medium egg
6 ounces semisweet chocolate chips
¼ cup finely chopped nuts
Preparation
1. Preheat oven to 400°F.2. In a large mixing bowl, combine flour, sugar, baking powder, cinnamon, and salt. Form a well in the center.
3. In a small bowl, combine milk, pumpkin, butter and egg. Add to the well in the flour mixture and stir until lightly mixed. Add chocolate chips and stir until the mixture is moistened.
4. Spoon mixture into greased muffin cups, filling each ¾ full. Sprinkle 1 teaspoon of chopped nuts over each muffin.
5. Bake 20 minutes, then remove from oven and cool for minutes. Remove from pans and allow to completely cool on racks.
